Fresh Guacamole

I am huge guacamole fan and have super high expectations of it when I go out to restaurants. One thing I hate is creamy guacamole. A lot of recipes call for less of the ingredients but I love having a lot of onions, jalepenos, and tomatoes in mine. I have a super easy recipe that you can use for some pretty amazing guacamole!

Ingredients:
2 ripe avocados
1 small red or yellow onion chopped
2 jalepenos chopped
2 roma tomatoes chopped
1/4 cup cilantro
1 clove garlic minced
1.5 tbsps lemon juice
1/2-1 tsp salt

Directions:

  1. Cut the avocados in half. Remove the seed and scoop out the avocado using a spoon.
  2. Using a potato masher, mash the avocado until it reaches a chunky consistency but not creamy.
  3. Mix in all the ingredients except the cilantro.
  4. Top it off with cilantro and enjoy!

Mexican Lasagna

So I got this recipe from one of my cousins. Made a few changes but it turned out amazing nonetheless!

Ingredients:
2 10 oz cans of Old El Paso Enchilada Sauce
1 16 oz can of Old El Paso Refried Beans
1 packet of Knorr Fiesta Sides Spanish Rice
6 extra large flour tortillas
2 cups cheddar cheese or fiesta blend
1 small onion, chopped
2 jalepenos, chopped
1/2 green pepper, chopped
1/2 cup of black olives, sliced
1 clove garlic, minced
2 tsps chilli powder
Salt, to taste

Directions:
  1. Preheat oven to 400 degrees
  2. Cook the Knorr Fiesta Sides Spanish Rice according to directions on packet.
  3. While it is cooking mix the beans, garlic, chilli powder, and salt.
  4. Once the rice has been cooked mix the beans and rice.
  5. Lightly grease a 9x13 baking dish.
  6. Spread a bit of enchilada sauce just enough to cover to bottom.
  7. Place 2 flour tortillas side by side.
  8. Spread half of the bean and rice mixture on top
  9. Drizzle enchilada sauce on top to cover.
  10. Sprinkle 1/3 of the cheese, onions, jalepenos, olives, and green peppers.
  11. Repeat steps 6-9 for second layer
  12. Place the remain two tortillas on top.
  13. Pour the rest of the enchilada on top.
  14. Sprinkle the rest of the cheese, onions, jalepenos, olives, and green peppers on top
  15. Place in oven until cheese is bubbly.
  16. EAT! =)
